The cuisine of the M`AR De AR Hotels is full responsibility of Chef António Nobre, who since 2002 contributed , with the quality of his art, for the fame of the ex-Cartuxa Hotel.
Among other activities, Chef António Nobre is a Brother of the Gastronomic Guild of the Alentejo. He participates since 2002 in the prestigious San Sebastian Congress "Lo Mejor de la Gastronomia". He was the pioneer in 2002 in the making of a listing of olive oils in Portugal. In 2004 he received the prize "Panela ao Lume". In 2006 he published the book "Portuguese Chefs, the best recipes" and received 2 gold awards in the contest "Gastronomy with Port Wine". He cooperated in innumerous newspapers and sites and in September 2006 he was selected to direct the page "Appetites" in the Portuguese paper Expresso. In cooperation with the Norwegian Council for Fishing (NORGE), he created a series of simple recipes with dry codfish, fresh cod and salmon. He was invited by Chef Henrique Sá Pessoa to participate in the T V program "Entre Pratos" (Between Courses) and is preparing the cookbook "70 recipes for the entire family".
António Nobre likes to be considered a Chef of Alentejo roots, able to innovate within the well balanced limits of the Mediterranean gastronomy, aiming at the preservation of its authenticity, linked to the products of the earth. He does not fear originality and assumes full responsibility for all his proposals.
